10 lbs Butter, softened
2 bottles of Norton
3/4 C Garlic, minced
1/2 C shallots, minced
1/4 C Kosher salt

Directions:
Directions:
Reduce bottles of Norton with shallots and garlic until it reaches glaze consistency, let cool.
Whip Butter in medium size mixer. Slowly add the cooled wine mixture and salt.
Whip until combined and butter looks purple evenly in the bowl.
Using big piping bags, pipe logs onto a lined sheet tray and freeze. Or use small ice cream scoops onto a lined sheet tray and freeze.
Bag up once frozen. Label and keep in freezer until needed.
