6 lbs Dark chocolate, chopped
4 lbs Butter
2 QT Water
12 C Sugar (8 C and 4 C portioned separately)
40 ea Eggs

Pre-heat oven to 300F.
In medium size mixer, beat eggs and 4 C of the sugar using wire whisk until 4x peeked.
Line cake pans (about 8) with parchment paper and spray with optimax generously.
Bring water, butter and 8 C of the sugar to a boil.
Then add chopped chocolate while whisking until combined. Use stick blender if needed to reach a smooth consistency.
Add chocolate mixture to egg mixture until combined.
Pour into pans until almost the top of the pan.
Place cake pans (2 each) into 200 pans and place in the oven.
Pour water into 200 pans almost to the top of the pan.
Bake at low fan uncovered for about an hour, rotating 200 pans half-way through cooking process. It should be done when the pick comes out almost clean.
Let cool, pop out using a torch, cut into 12 pieces, placing in shallow, lined fish tubs. Label.
