1 large package assorted lettuce greens
salt and pepper
parmesan cheese, grated
croutons (optional)

Creamy Garlic Dressing:
1 large clove garlic, pressed through garlic press
1/4 tsp salt
1 tbsp mayonnaise
1 tbsp white wine vinegar
1 1/2 tsp Dijon mustard
pinch pepper
1/3 cup vegetable oil or evoo

Directions:
Directions:
1. In a bowl and using the back of a spoon, mash pressed garlic with salt to form a paste. Whisk in mayonnaise, vinegar, mustard and pepper.

2. Gradually whisk in oil in slow steady stream until blended. (Vinaigrette can be covered and refrigerated for up to 5 days. Whisk to re-blend). I usually double this recipe to make sure I have enough or some leftover. Vegetable oil will keep dressing more liquid than evoo. If you are going to use evoo, take dressing out of fridge 30-60 minutes before you are going to use it.

3. Drizzle salad with about half the dressing; toss gently just until leaves are coated and glistening. Taste and adjust seasoning with salt and pepper if necessary. Sprinkle with grated parmesan and croutons (if using). Serve immediately.
