2 pita breads
1 English cucumber
3 tomatoes, ripe
4 green onions, chopped
1/2 cup coarsely chopped fresh parsley
1/4 cup chopped fresh mint
4 tbsp evoo
4 tbsp fresh lemon juice
1 tsp ground sumac (from middle eastern grocery store)
4 tbsp zaatar spice (from middle eastern grocery store)
2 cloves garlic, minced or pressed through garlic press
1/2 tsp each salt and pepper
1 romaine lettuce, torn into bite size pieces - about 8 cups
3 tbsp evoo for pita breads

Directions:

1. Split pitas in half; brush with 3 tbsp evoo and sprinkle with zaatar before toasting. Bake in 375ºF preheated oven or toaster oven for 5-10 minutes or until crisp. Watch that they don't start to burn. Break into bite size pieces, set aside.

2. Peel and seed cucumber using teaspoon. Cut into 1/2" chunks and place in salad bowl. Cut tomatoes into 1" chunks and place in salad bowl. Add chopped green onions, parsley and mint to bowl. Whisk together oil, lemon juice, sumac, garlic, salt and pepper; pour over cucumber mixture and toss. Cover and let stand for 30 minutes. Can make ahead and refrigerate for up to 3 hours. Allow to come to room temperature before serving.

3. Just before serving, add romaine and pita; toss and serve.
