Kale, Fig and Halloumi Salad Recipe

8 oz halloumi cheese (PC makes a good one)
1 bunch (about 10 cups) curly kale
3 tbsp olive oil
3 tbsp balsamic vinegar
8 oz fresh figs - about 10 medium figs
1/3 cup roughly chopped walnuts
1/4 tsp salt
pomegranate seeds (Loblaws now has frozen pomegranate seeds)

1. Lightly grease a skillet and heat over medium. Slice the halloumi cheese into 1/4" slices and place the slices in the skillet. Let the halloumi fry to 7-8 minutes until golden brown on both sides. Place on a plate and allow to cool to room temperature. Chop into small pieces once cooled.

2. Cut the stems off the figs, then slice them in half lengthwise. Discard the stems.

3. Remove the leaves from the stalks of the kale. Discard the stalks. Chop the kale leaves into bite sized pieces.

4. Place the kale leaves into a salad bowl and pour the olive oil over them. Massage the olive oil into the kale for 2-3 minutes until the kale is softened and slightly wilted.

5. Add the balsamic vinegar, fresh figs, chopped walnuts, pomegranate seeds and salt. Toss the salad gently to combine

6. Let the salad sit for a few minutes at room temperature to allow the flavours to blend. Toss again, then serve. The salad should be eaten in one sitting; leftovers do not keep well. You can halve the recipe for a smaller crowd.
