Large kosher all beef salami (about 1 pound), "Chicago" or other brand
4 tbsp yellow mustard
1/2 cup apricot or peach jam (less sugar, more fruit variety)

Directions:
Directions:
1. Line a meat loaf pan with parchment paper so that parchment goes up the sides.

2. Remove all wrappings from salami and score salami, making crisscrosses on top, cutting almost all the way through and place in loaf pan.

3. Combine liquid mustard and jam. Pour sauce on top of salami. Bake in preheated 375ºF oven for 1 hour, basting halfway.

4. Cut into pieces and serve.
