Ingredients: 1 1/2 cups Philadelphia cream cheese (light) 2 tsp curry powder 1/2 cup red pepper jelly 1/2 cup mango or peach chutney 1/2 cup chopped shallots 1/2 cup cranberries, chopped or craisins 1/2 cup golden raisins, chopped 1 cup chopped pistachio nuts

Directions:1. Mix cream cheese and curry together until creamy. Spread over the bottom of a shallow glass dish (like one you would use for a quiche).
2. Mix red pepper jelly and chutney together. I used mango chutney (Earl Grey is a really good brand). Spread over top of cream cheese mixture.
3. Layer the shallots over the the jelly mixture; layer the cranberries over that; layer the raisins over the cranberries and top off with the pistachios. |

Notes: You can make this 1-2 days before serving. Cover tightly with plastic wrap. Serve with nacho scoops, crackers or toasted baguette slices. Don't use highly flavoured crackers as they will compete with this dish. ABSOLUTELY DELICIOUS - YOU LOVED THIS RECIPE! Serves 12.
