Prepared City Chicken

To Fry:
1 tbsp. butter or margarine

To Bake:
Small amount of milk
Unseasoned bread crumbs

City Chicken may be baked or deep fried.

To Fry: Prepared City Chicken
Melt 1 tbsp. butter or margarine in a fry pan over medium heat. Place skewer containing City Chicken into fry pan. Fry meat, turning often to avoid burning until outside is crispy - approx. 25 to 30 minutes (170ºF internal temperature).

To Bake: Preheat oven to 350ºF
Dip meat in milk and then roll in the bread crumbs. Place meat in a shallow baking pan or on a cookie sheet. Place meat about 1" apart. Bake uncovered for 25 minutes. Turn meat over and bake an additional 20 minutes (or to an internal temperature of 170-175ºF).

For variety serve with fried onions, and /or peppers, mushrooms and cherry tomatoes. Also good with spaghetti sauce.
