Cream Puffs Recipe

1 stick butter
1 c. boiling water
1 c. flour
¼ tsp. salt
4 eggs

Pudding to fill Cream Puffs
¾ c. sugar
⅓ c. flour
¼ tsp. salt
2 c. milk
3 egg yolks
½ stick butter
1½ tsp. vanilla.

Directions:
Directions:
Puffs: Add butter to boiling water. Stir well until melted. Add flour and salt and cook until mixture is smooth and forms soft ball. Add 1 egg at a time, beating thoroughly after each. Drop batter onto greased cookie sheet. Bake at 450º for 15 minutes. Reduce heat to 300º and bake for 25 minutes. Fill cream puffs with pudding and sprinkle with powdered sugar or frost with chocolate frosting.

Pudding: Combine sugar, flour and salt in heavy pan. Add ½ c. of the milk. Stir well. Add egg yolks. Stir well. Add remaining 1½ cups milk. Cook, stirring continuously over medium heat until thick. Add butter and vanilla. Stir and cook until butter melts. Let cool, stirring occasionally. Fill cream puffs. Refrigerate.

I used to make these a lot. There were certain people that would pay me to make them for their parties!

Note: I sometimes would refrigerate the pudding to get it cold and then fold in Cool Whip before filling the Cream Puffs.
