Notes: Other veggie toppings that go well in the thai theme include potatoes, red onion, any bell pepper variety, and crumbled nuts such as peanuts and cashews. The shredded cheese is primarily there to glue all the ingredients in place - feel free to omit or go light on it as a result. The coconut milk in the peanut sauce provides a different flavor of sweet, and opens the door for non-dairy folk to enjoy. One of our local pizza joints had a thai chicken pizza as a specialty for about two weeks back in 2005, and I did my best to replicate at home. It's now become one of our celebrated staples.
