Pizza dough or crust of your choice
Peanut Sauce (see below)
1 boneless skinless chicken breast per pizza
1/4 cup shredded mozzarella cheese
1/4 cup shredded carrot
2 Tbsp diced red pepper
2 Tbsp frozen corn
Cilantro, green onion, and sesame seeds for garnish

Directions:

1) Prepare your pizza crust or dough as per directions
2) Cut chicken into bite-sized pieces and broil or sauté in sesame oil until cooked through. Allow to drain thoroughly.
3) Spoon sauce onto crust. Add chicken, then veggie toppings, then cover with cheese.
4) Bake at 425º F for 8-10 minutes or until crust is at desired level of crisp. Garnish with fresh cilantro, sliced green onion, and/or sesame seeds.
 

Peanut Sauce

2 Tbsp smooth peanut butter
1 Tbsp butter
1 Tbsp soy sauce
1 tsp lemon juice
1/4 tsp red pepper flakes
2-8 Tbsp coconut milk

Combine the first five ingredients in a small, shallow pan over low heat until homogenized. Stir in coconut milk until the resulting mixture is slightly thicker than spaghetti sauce. Use immediately, or store in an airtight container in the fridge for up to two weeks.

Other veggie toppings that go well in the thai theme include potatoes, red onion, any bell pepper variety, and crumbled nuts such as peanuts and cashews. The shredded cheese is primarily there to glue all the ingredients in place - feel free to omit or go light on it as a result. The coconut milk in the peanut sauce provides a different flavor of sweet, and opens the door for non-dairy folk to enjoy. One of our local pizza joints had a thai chicken pizza as a specialty for about two weeks back in 2005, and I did my best to replicate at home. It's now become one of our celebrated staples.
