3 1/3c all-purpose flour
2 1/2tsp baking powder
1/2tsp salt
1/4c oil
1 1/4c sugar
2 large eggs
2 large egg whites
1tsp finely grated lemon zest
1/2tsp finely grated orange zest
1tsp anise extract or almond extract
1tsp vanilla

Directions:
With rack in the center of the oven, preheat to 375º. Grease a cookie sheet. Whisk together the flour, baking powder and salt. In another bowl beat oil, sugar, eggs and egg whites, lemon and orange zest, almond and vanilla extract. Gradually add the flour mixture until well blended and smooth. Shape the dough in to evenly shaped 11x1 1/2inch logs, either by wrapping in plastic and rolling back and forth or shaping with lightly floured hands. Arrange the logs as far apart as possible on the pan and gently flatten. Bake for 25 minutes. Remove the sheet to a rack. When the logs are cool enough to handle cut 1/2inch diagonal slices and place flat back on the cookie sheet. Bake for 10 more minutes. Turn over and bake till lightly browned for another 5-10 minutes. Cool on rack.
