1 frying chicken, cut up
1 C flour w. salt and pepper to make coating mixture
3 Tbsp bacon drippings
1 Tbsp minced onion
1 can mushrooms - stems and pieces ( including liquid)
1 C uncooked rice (or instant if preferred)
1 C white wine
1 C hot chicken stock (or bouillon)
parmesan cheese

Directions:
Directions:
Dust/coat chicken with flour mixture
Heat bacon drippings in large skillet.
Add chicken and brown slowly on both sides.
Add minced onion and wine, then cover and simmer for 20 minutes.
Add mushrooms and chicken stock. Sprinkle in the uncooked rice.
Add the parmesan cheese,

Cover and cook until rice is done.
