1 c. quinoa
2 c water
4 T. olive oil
2 limes juiced
2 tsp. ground cumin
1/2 T. salt
1/2 tsp. red pepper flakes or more to taste
1 1/2 c. halved cherry tomatoes
1 (15 oz.) can black beans, drained and rinsed
5 green onions, finely chopped
1/4 c. chopped fresh cilantro
salt and pepper to taste

1. Bring quinoa and water to a boil in a saucepan. (check the miscellaneous section for how to
handle quinoa before cooking).
2. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed
(about 10-15 minutes). Set aside and cool.
3. Whisk olive oil, lime juice, cumin, salt and red pepper flakes together in a bowl.
4. Combine quinoa, tomatoes, black beans, and green onions together in a bowl.
5. Pour dressing over quinoa mixture; toss to coat.
6. Stir in cilantro, season with salt and pepper.

This is really a delicious, healthy salad. Quinoa is called a superfood - a complete protein, so I am trying to use it more. I am adding a "recipe" in the miscellaneous section, so you will feel comfortable working with quinoa.
