2 packages vanilla sugar free instant pudding
2 1/4 cups skim or 1% milk
16 oz. can of pumpkin
1/4 tsp pumpkin pie spice
1/4 tsp vanilla extract
8 oz. tub of fat free cool whip
A dash of cinnamon and nutmeg

Directions:

Whisk together vanilla pudding and milk until thick (about a minute or so).
Add (to the pudding/milk mixture) pumpkin, pumpkin pie spice and fold in the cool whip.

While this is great on it's own, served in a dish with a little extra cool whip on top, it also serves as the perfect dip for some graham cracker sticks, apple slices or vanilla wafers. Like many recipes, this tastes better after it refrigerates overnight. This is so good and a great dessert - light and delicious!!
