Peel 3 large eggplants and slice it as thick as you like.
Beat 6 eggs with ½ of water.
Dip the eggplant in the egg mixture and then dip the eggplant in flour.

Tomato Sauce
Fry 4 garlic cloves, sliced, in ½ cup of oil.
Add 2 cans of crushed or whole tomatoes and cook on low for 40 minutes

Fry the eggplant or bake them, whichever way you like.

Put tomato sauce in the bottom of your backing dish.
Then a layer of eggplant, a layer of mozzarella, and a layer of grated cheese. Add more sauce. Continue these layers until you use all of your eggplant.

Bake at 350º for 35/40 minutes, covered.
