½ cup butter
1 ¾ cups of sugar
1 egg yolk (save the egg white)
¼ teaspoon vanilla
1 ¼ cups flour
½ teaspoon salt

Directions:
Directions:
Cream the butter, sugar and beat until its fluffy.
Add egg yolk and vanilla.
Then add flour and salt.

Chill the dough for 2 or 3 hours in the refrigerator.

Make a ball the size of a walnut. Beat the one egg white and roll the ball into the egg white. Then roll the ball into coconut. Put on cookie sheet and bake 300 degrees for 20-25 minutes.
