Clean unused vegetable parts that you going to dispose of.

May need some carrot, celery, etc to make enough or add variety.

4 cloves of garlic

Pot of water depending on volume of vegetable pieces you have.

Directions:
When you are cutting up vegetables and you cut the ends off, or the leafy part of carrots, the tough part of asparagus etc, save those. Peelings from vegetables. Can add some carrots, celery, onion, and a little garlic. Wash them good.

Add vegetables to a pot so that you can add enough water to cover the vegetables plus a little more.

Simmer for about one hour.

Now you have fresh vegetable stock. You can freeze it. Use for soups or stews.

When you use for your soups or stews add any other spices you may need. Can use to make a meat stew with any leftover meat you may have.
