3 ½ cups sifted all purpose flour
2 tsp. baking soda
2 tsp. salt
1 tsp. each baking powder, cinnamon, and nutmeg
½ tsp. ginger
3 cups sugar
1 cup vegetable oil
4 eggs
1 can pumpkin puree
⅔ cup orange juice
1 ½ cups chopped pecans

Directions:

Grease and flour 2 loaf pans
Mix dry ingredients and set aside
Beat sugar, oil, and add the eggs one at a time. Stir in pumpkin puree and orange juice. Slowly blend in the dry ingredients. Pour even amounts into the 2 loaf pans and allow to stand for 20 minutes prior to baking. Bake for 1 hour and 15 minutes. Allow to cool 5 minutes before turning on to the racks to cool.
