½ cup solid vegetable shortening
1 cup sugar
2 eggs
1 cup mashed ripe bananas
1 tsp lemon juice
2 cups softened flour
3 tsp baking powder
½ tsp salt
1 cup chopped nuts (optional)

Directions:
Directions:
Cream shortening, gradually adding sugar. Beat in eggs one at a time. Press banana through sieve and stir together with lemon juice. Beat into creamed mixture. Sift together flour, baking powder, and salt. Add to banana mixture and stir until only ingredients are moistened. Stir in nuts. Turn into greased loaf pan. Bake 375º for 1 hour to 1 hour 15 minutes. Cool completely.
