10½ oz. canned clams (two 6½ oz. cans)
1 carrot diced (¼ c.)
2 c. diced raw potatoes
⅓ c. diced celery
3 c. chicken broth (3 c. water + 3 bullion cubes)
2 tbsp. chopped onion
4 tsp. butter
2 tbsp. flour
½ c. cream
Salt and pepper

Directions:
Directions:
Drain off and measure liquid from clams - should be one cup. Rinse clams to remove any sand. Put carrots, potatoes and celery into chicken broth and broil gently until tender. CUt clams into small pieces and sauté clams and onions in butter for 5 minutes. Blend flour into this mixture. Add broth and vegetables gradually, stirring to keep smooth. Add the clams broth, cream and seasonings. Reheat just to boiling.

Makes 8 cups.
