1 (3oz) pkg. raspberry jello
1 cup boiling water
1 (8oz) pkg. cream cheese
1 cup sugar
1 tsp vanilla
3 tablespoons lemon juice
1 tall can evaporated milk - chilled icy cold
1 and ⅓ graham cracker crumbs (20)
¼ cup butter, melted

1. Pour water over jello, dissolve and cool.

2. Cream together cream cheese, sugar, and vanilla, add cooled jello and blend thoroughly, chill until mixture begins to set.

3. While gelatin is chilling, crush graham crackers, measure and add melted butter. Place ⅔ of mixture in bottom of 9x13 pan. Press crackers on bottom firmly.

4. Add lemon juice to chilled milk and whip until stiff enough to hold a peak, fold in jello thoroughly.

5. Turn into pan and sprinkle with remaining cracker crumbs. Chill minimum 3 hours.
