Beef Bourguignon Recipe

1/4 C flour
1 t salt,
1 t pepper
2 lbs filet mignon or top sirloin 1" x 1" cubed
3 T bacon grease
1-1/2 C burgundy or merlot
1/2 C beef broth
1 bay leaf

3 T butter
8 oz mushrooms
4-5 shallots, peeled & separated

Preheat oven to 300º

Put flour, salt, pepper in gallon baggie with meat. Heat grease in a skillet, and saute till brown. Transfer meat to a casserole dish. Add wine and broth to pan, scrap pan, and heat for a minute. Pour over beef. Add bay leaf. Cover and cook 1-1/2 hours at 300.

Just before 1-1/2 is up, heat butter in a pan. Add mushrooms and shallots and cook a few minutes. Add this to the casserole. Cover it back up and cook 30 more minutes or so.

Serve over noodles, rice, or potatoes (my favorite is smashed potatoes).
