6 C water
2 T salt
2 T vinegar
2 Bay leaves
1 tsp mixed pickling spice
2 branches of celery
2 lbs of fresh or frozen shrimp

Directions:
Directions:
Combine the water, salt, vinegar, bay leaves, pickling spice and celery. Bring to a boil. Add the shrimp (fresh or frozen, in shell or peeled and cleaned).

Lower heat and simmer until shrimp turns pink (about 1-3 minutes). Drain. If cooked in the shell- peel and remove vein.

Note: When cooking for seasoned dishes omit spices and vinegar
For each 1 C of cooked, clean shrimp buy 12 oz raw shrimp in the shell or 7-8 oz frozen, shelled shrimp or one 4 1/2-5 oz canned shrimp.
