2-1/2 lbs filet mignon
butter for rubbing, softened
olive oil for rubbing
salt & pepper

Directions:

Preheat oven to 500º (keep meat in frig until ready to prepare)

Rub butter and olive oil on meat, and salt and pepper it. Bake in uncovered dish for 11 minutes. Then immediately turn oven down to 300º Cook for an additional 38 - 40 minutes. Can check with meat thermometer, and 160º means meat is medium. Let sit out of oven 5-10 minutes before cutting
