1 C honey
1 C vegetable oil
4 eggs
1 tsp vanilla
2 C grated carrots
Grated rind of 2 oranges
3 C flour
3 tsp baking powder
½ tsp salt
1 C raisins

Directions:
Directions:
Beat together eggs, vanilla, and carrots.
Mix honey and oil until blended and add to egg/carrot mixture. Stir in orange rind.
In separate bowl mix together flour, baking powder and salt.
Gradually stir the flour mixture into the other mixture until everything is blended well.
Put into greased and floured pans.

Bake at 350º until loaves are puffed and firm to touch in center (no time is given)
Cool 5 minutes and then remove loave(s) from pans.

Serve with butter or cream cheese if desired.

The recipe calls for 8 mini loaf pans but if a normal loaf pan is used, the bread will have to cook longer. Use toothpick to test for doneness.
