1 can salmon (red sockeye)
1 egg
2 T onions, chopped
About 2 T flour
pepper to taste
bacon grease

Directions:
Directions:
Drain salmon and remove spine, and most of thin bones and skin. In a mixing bowl, add salmon, egg, onions, flour and pepper. Mix well. Fry in skillet with bacon grease. About 3 T. Add more during frying if needed.
(when scooping patties out of bowl with 2 spoons, press together, making kind of an oval, then place in hot skillet and gently smash a little)

Cook about 5 - 7 minutes on each side on medium heat.
