1 3/4 c. all purpose flour
1 Tbl. pumpkin spice
1 tsp. baking soda
1/2 tsp. salt
1 15 oz. can pumpkin
1 c. granulated sugar
1/2 c. packed brown sugar
2 large eggs
1/2 c. vegetable oil
1 Tbl. vanilla extract
8 oz. cream cheese
1/4 c. granulated sugar
1 large egg yolk
2 tsp. vanilla extract

Preheat oven to 375 degrees. Put paper baking cups in a muffin tin. Stir flour, spice, soda, and salt in a bowl until well mixed. Set aside. In a large bowl whisk together pumpkin, sugar and brown sugar. Beat in eggs, vegetable oil and vanilla. Slowly whisk in the flour mixture, until there are no lumps. Fill muffin tins 3/4 full.
In a meduim bowl, beat the cream cheese until smooth. Add in the sugar, egg yolk and vanilla and beat until well combined. Top each muffin with about 1 tablespoon of the cream cheese mixture. Use a toothpick to swirl it in.

Bake muffins 18-20 minutes or until toothpick comes out clean. Cool.
