1 boneless chuck roast, trimmed and seasoned with salt and pepper (optional on the pepper) about 3-4 Lbs
3 Tbsp oil
1/4 cup flour
2 Tbsp tomato pste
1/2 cup dry white wine
1 1/2 cups beef broth
1 Tbsp Worcestershire sauce
2 cups sliced onions
6 medium carrots peeled and cut into 2-3 inch pieces
3 large celery ribs cut into 2-3 inch pieces
6 cloves garlic chopped
3-4 sprigs of fresh thyme
2 bay leaves

Heat oil in a saute pan over medium high heat. Sear roast on all sides about 10 minutes total. Transfer roast to a 4-6 Qt slow cooker.
Stir in the flour in the saute pan and cook about 1 minute. Add the tomato paste and cook 1 minute more. De-glaze the saute pan with the wine, cooking until liquid evaporates stirring to get up all the browned bits. Stir in the broth and Worcestershire sauce. Bring to a simmer, scraping up any browned bits. Transfer broth mixture to the slow cooker: Add onions, carrots, celery, garlic, thyme and bay leaves. Cover and cook until meat is fork tender- on high setting about 4-5 hours or 8-9 hours on low. Discard the thyme sprigs and bay leaves before serving.
