2 pounds ground beef
2 Tbsp oil
2 pounds yellow onions, chopped fine.
6 cloves of garlic chopped
1 Tbsp oregano
2 Tbsp fresh parsley
1/2 tsp thyme
2 tsp sugar
1 (28 oz) can of whole tomatoes
1 (28 oz) can petite cut diced tomatoes
3 cups frozen zucchini chunks thawed and drained of liquid.( if you use fresh zucchini microwave it until juices are released and drain before adding}
2 cups fresh or frozen corn.
salt pepper and paprika to taste (I use apple wood smoked salt for flavor)
2 tsp liquid smoke
2 tsp Worcestershire sauce
Tortilla chips
grated cheese of your choice. I like cheddar and Gorgonzola.

Directions:
In a Dutch Oven, add 2 tsp oil and heat until shimmering. Add the ground beef and cook breaking apart the meat as it cooks until the juice evaporates and the meat starts to brown. Transfer the meat to a colander or sieve and allow the fat to drain out.
In the Dutch Oven add 4 Tsp of oil and heat until shimmering. Add the chopped onions and cook until softened and just starting to lightly brown. Add the chopped garlic and cook 30 -40 seconds until fragrant.
While the onions are cooking place the whole tomatoes in a blender or food processor and blend until smooth. You can add 3/4 cup of chopped tortilla chips to the tomatoes while they process if you want a thicker chili.
Add the pureed tomatoes, parsley and oregano to the onion mixture. Add the beef, squash, corn, sugar, salt, Worcestershire sauce and liquid smoke Stir in the diced tomatoes. Heat until simmering and cook 1 hour, stirring occasionally
Serve with tortilla chips and cheese

No beans, no cumin, no hot peppers, no chili powder, hence the name un-chili. And yes Andy will eat this.
