1 pound ground sausage
2 cups bisquick
1/1/4 cup grated cheddar cheese

Directions:

Mix all ingredients well with hands and shape into 1 inch balls. Place on cookie sheet and freeze then store in ziploc bag in freezer. When ready to bake, preheat oven to 400º and bake for 15 minutes.

When Carter was diagnosed with Type 1 diabetes, this became a recipe that we kept on hand because it was relatively low-carb and we learned that he dod much better during the day if he had protein in the morning. We did the math and figured that if this recepie makes 70 sausage balls, that's 2.3 grams of carbs each. So I wrote it in the cookbook (Floyd's Finest, 1990).
As I work on this cookbook, I find notes that I've written such as carb counts or 'Hannah's fav if I leave out the mushrooms' or 'Double this because Curtis can eat 4 servings in 1 sitting'.
