Banana Bread Recipe

1 cup shortening
4 eggs beaten
1 teaspoon salt
2 teaspoons baking soda
2 cups sugar
8 large ripe bananas
4 cups all-purpose flour
optional: 1/2 cup mini chocolate chips

Directions:
Directions:
Preheat oven to 350º. Cream shortening and sugar in mixer. Add beaten eggs. Peel and mash bananas then add to mixture. In separate bowl combine flour, salt and soda. Slowly combine two mixtures. optional: add chocolate chips and combine.
Pour into 4 regular loaf pans or 8 mini-loaf pans and cook 45 minutes or until the middle is done. Great for freezing.

This modified recipe comes from the 1990 edition of Floyd's Finest cookbook that was compiled by Barbara Carter, the UGA extension agent and 4-H teacher for many years. This is one of our family favorites and especially Carter's. On August 3, 2008 he and I were in the kitchen making banana bread and he asked if he could have this recipe and cookbook when I die. It was a little morbid, but he's funny like that. So I did what any mom would do and I took out a sharpie and wrote that on the back. I always think of Carter when I make banana bread, even though it is a favorite of everyone, especially warm out of the oven.
