6 large sweet potatoes or yams

Orange juice (about a 1/4 cup)
Heavy cream
6 Tbs unsalted melted butter
Brown sugar or agave (to taste)
1-2 tsp nutmeg
1-2 tsp cinnamon
Salt and pepper to taste

Directions:
Directions:
Peal yams, and bake at 400 degrees until soft. This can be 1-2 hours, depending on size.

In large bowl, combine the remaining ingredients (orange juice, heavy cream, unsalted melted butter,
brown sugar (or agave), nutmeg, cinnamon, salt and pepper with the yams. To your taste.

Place in baking dish or large skillet, bake 20 to 30 minutes at 350, then cover yams with marshmallows and cook a few minutes until yams are brown to your liking
