1 c all purpose flour
¼ c sugar (powdered)
¼ tsp salt
1 large egg yolk
2 tbsp flour
1 tbsp lemon zest
½ c butter (softened)
¼ tsp vanilla
2 large eggs
1 c white sugar
¼ c fresh lemon juice
powder sugar (optional)

Directions:
Preheat oven to 350º Lightly oil 8x8 pan Place 1 c flour and butter in large mixing bowl and mash with the back of spatula or spoon until thoroughly combined Mix in ¼ c powdered sugar, vanilla and salt mash mixture together until it looks like a slightly crumbly cookie dough. Press dough in the bottom of the baking dish. Use a fork to prick holes all over the crust.
Bake until edges are golden brown. 22 mins

Beat eggs and egg yolk, whisk in sugar, +2 tbsp flour until smooth. Add lemon juice & zest whisk for 2 mins Pour lemon custard over crust.

Bake until custard is set *Tip has thin white sugar crust. Cool completely before cutting, can sprinkle with powdered sugar.
