6 oz Rotelle

1/4 cup sesame seeds
1/4 cup vegetable oil

!/4 cup vegetable oil
1/3 cup soy
1/3 cup white wine vinegar
2 Tbsp sugar
1/2 tsp salt and pepper

3-4 boneless skinless chicken breasts, poached
1/2 cup green onion, sliced on the diagonal
1/2 cup parsley, chopped
2 bunches fresh spinach, chopped

Directions:

Coo the poached chicken and set aside.
Cook together 1/4 cup sesame and 1/4 cup oil until seeds are golden. set aside.
For Dressing
Mix 1/4 cup oil, soy, white wine vinegar, sugar, salt and pepper and sesame seeds and oil that they were
cooked in.

In a large bowl mix shredded chicken, pasta, green onion, parsley and spinach.
Pour on most of dressing and mix well.
If it needs it, add the rest of the dressing.

You can do everything ahead and add the spinach just before serving also

This is something I have been making for years. I think it's in the other cookbook but I love it and it is so yummy I have added it again.
I originally learned the recipe for Joan Whickam when she was at the cooking school at the Magnolia Kitchen Shoppe.
I made it one of my signature salads, would not give away the recipe and made it millions of times. One day I had made a gallon of
dressing and was really busy getting ready for the Christnas open house in the Village and CRASH......I knocked the dressing onto the
floor and it went everywhere....Nightmare on 32nd street! But we got it cleaned up and had a very successful evening.
Now I give the recipe to whomever asks.....maybe they will remember me by it.
