3 large carrots, cut up
3-4 stalks of celery, cut up
1 small onion, cut up
1 green pepper, cut up
10 red tomatoes, cut up
1 tsp salt
1 tsp dry basil
1 tsp thyme
1/2 tsp pepper
1 bay leaf
2 T sugar
2 c chicken broth
1 c water
1/2 cup onion, finely chopped
2 T butter
2 T olive oil
1/4 c flour
3 T tomato paste
1 c chicken broth
1 c heavy whipping cream

Directions:
Directions:
Mix the carrots, celery, onion, pepper, tomatoes, salt and other spices, sugar, chicken broth and water in a large pan. Bring to a boil and simmer for 30-40 minutes until vegetables are soft. Remove from heat and remove bay leaf. Pour into a blender and puree. Set aside. In frying pan, saute onion in butter and olive oil until onion is soft. Add flour for a smooth paste. Add the tomato paste and 1 cup chicken broth. Cook until thickened. Gradually combine with cooked tomato puree. Bring to a boil and remove from heat. Stir in the heavy whipping cream. Serve immediately.
