Pumpkin Turkey Chili Recipe

1 tbsp. oil
1 c. chopped onion
½ c. chopped green pepper
½ c. yellow pepper
1 clove garlic
1 lb. ground turkey
1 can diced tomatoes (14.5 oz.)
2 c. pumpkin puree
1½ tbsp. chili powder
½ tbsp. ground black pepper
1 dash salt
2 cans chicken stock
½ c. shredded Cheddar cheese
½ c. sour cream

Heat the oil in a large skillet over medium heat, and sauce the onion, green pepper, yellow pepper, and garlic until tender. Stir in the turkey and cook until brown. Drain, if needed, and mix in tomatoes and pumpkin. Add the chicken stock. Season with chili powder, pepper and salt. Reduce heat to low, cover and simmer 20 minutes. Serve topped with Cheddar cheese and sour cream.

Note: You may want to start with 2 cans of chicken stock and add more, if needed.

I have won 1st and 3rd place in our yearly church Chili Cookoff with this recipe. You cannot tell there is pumpkin in this chili but it makes it very smooth.
