2½ Flour- unsifted
½ powdered Cocoa
1½ Baking Soda
1 tsp Cinnamon
1 tsp Salt
2½ tsp Baking Powder

¾ Butter - room temperature
2 cups Sugar
3 Eggs
2 cups Zucchini- grated on the large holes of a box grater
2 tsp Vanilla
2 tsp Orange Zest
½ cup Milk

1 cup Pecans- chopped fine (optional)


Directions:

Combine dry ingredients in a medium bowl- set aside.

In a large bowl - by hand with a large wooden spoon-Mix butter and sugar together- briefly. Add eggs - one at a time. Mix well after each edition. Add zucchini, vanilla and orange zest mix well.

Add dry ingredients to wet ingredients-stir just until blended. Pour into 2 well greased 5x7 loaf pans or one 9x13’ pan.
