1/2 cup Non-fat plain Greek Yogurt
1/4 cup finely chopped almonds
1/4 cup panko bread crumbs
1/4 cup finely chopped fresh parsley
1 tsp no-salt garlic and herb seasoning
1/2 cup water
4 (4oz,) salmon fillets 1" thick
2 tsp lemon zest
1/4 tsp black pepper

Nutrition: 200 calories, 9 g fat, 1 g sat fat, 60 mg cholesterol, 60mg sodium, 4g carbs, 1g fiber, 24 g protein

01 Preheat oven to 450 F. Coat a rimmed baking sheet with nonstick cooking spray.
02 For the marinade, in a large shallow dish, combine yogurt, seasoning and water. Place fillets in marinade, turning to coat. Let stand for 10 minutes.
03 In another shallow dish, combine almonds, bread crumbs, parsley and pepper to taste.
04 Remove fillets from marinade, discard marinade. Roll fillets in almond mixture, pressing gently to adhere. Place fillets on prepared baking sheet.
05 Bake fillets 10 minutes or until fish flakes easily with a fork. Transfer to a platter and serve.
