1 pkg. unflavored geletin
½ c. cold water
1 c. sugar
1 med. can crushed pineapple (about 10 oz.)
1 8-oz. pkg. cream cheese
1 c. grated carrots
1 c. chopped pecans
1-2 c. Cool Whip

Directions:
Directions:
Dissolve the gelatin in the cold water and set aside. Bring to a boil the sugar, pineapple and cream cheese. Pour into gelatin and stir to dissolve. Cool until it starts to thicken then fold in the carrots, nuts and Cool Whip. Pour into a 9 X 9 X 2 pan and refrigerate.
