Saute 1 c. chopped onion in butter. Remove from heat. Stir in 4 c. hot cooked rice, 2 c. sour cream, 1 c. cottage cheese, salt and pepper.

Directions:
Layer half the rice mixture in 12x8x2 buttered baking dish. Cover with 1 ½ cans green chiles, halved lengthwise (leave seeds). Sprinkle with 1 c. grated cheddar. Repeat layers. Sprinkle with chopped parsley.

Bake, uncovered at 375 about 25 minutes.
