Rio Grande Pork Roast


Place a 4-5 lb. Boneless rolled pork roast, fat side up, on rack. Combine 1/2 t. salt, 1/2 t. garlic salt, and 1/2 t. chili powder. Rub into roast. Roast @ 325 degrees 2 - 21/2 hours (to 165 degrees).

In small saucepan combine 1/2 c. apple jelly, 1/2 c. catsup, 1 T. vinegar, and 1/2 t. chili powder. Boil, then simmer uncovered for 2 minutes. Brush roast with glaze. Sprinkle top with 1 c. crushed Fritos.

Roast 10-15 min more (to 170 degrees). Remove from oven, let stand 10 minutes. Measure pan drippings including corn chips, and add water to make 1 cup. Heat to boiling and pass with meat.
