Ingredients: Grandma did not always measure but here is what she had on her recipe card.
Filling 1½ cups brown sugar (generous cups) ⅔ c. flour ½ tsp. salt 6 egg yolks 4 cups milk (probably used part evaporated milk to make it rich) ¾ stick butter 2 tsp. vanilla
Meringue 6 large egg whites (reserved from pie filling recipe) ½ tsp. cream of tartar ½ c. sugar

Directions:Filling: Mix brown sugar, flour and salt in large heavy saucepan. Add ½-1 cup of the milk to make a paste. Add the egg yolks one at a time, stirring well. Slowly add in the remaining milk. Cook and stir over medium heat until it begins to thicken. Add the butter and vanilla and and cook until it starts to boil. Remove from heat and pour into 2 pre-baked pie crusts. Top with meringue.
Meringue: With a mixer, beat egg whites with cream of tartar until soft peaks form. Gradually add sugar, beating until stiff and glossy peaks form and all sugar is dissolved. Spread meringue over slightly warm filling, sealing to edge of crust. Bake at 350º for 12-15 minutes or until meringue is golden. Cool for 10-15 minutes. |
