Saute:

2 c. zucchini (mushrooms, broccoli, etc.) sliced chopped or grated
1 c. chopped onion
Optional with mushrooms only – diced Ortega chiles

Add:

4 beaten egg whites
1 ½ c. cooked rice
salt and pepper (seasoned salt?)
2 c. cottage cheese

Directions:
Directions:
Put in baking dish and sprinkle with:

½ c. breadcrumbs
½ c. parmesan cheese
¼ c. melted butter

Option: Mix the parmesan into the rice mixture and just sprinkle plain crumbs on top.

Bake @ 350 degrees for 40 minutes or so.
