2 lb. ground chuck or hamburger
2 tbsp. Morton's Tender Quick Salt
1½ t. Liquid Smoke - Hickory flavor
⅛ tsp. garlic powder
¼ c. water
12-15 peppercorns or 1 tbsp. coarse black pepper
2 tsp. black pepper

Mix well and form into two or three log rolls on wax paper. Cover tightly and refrigerate for 24 hours. Bake at 300º for 1 hour uncovered. Turn if needed.Blot and pat well with paper towels, cool, and refrigerate.
