2 Cups cubed cooked chicken (3/4 raw breasts)
3 or 4 Cloves garlic
½ Small/Medium onion
1½ Cups slivered celery (3/4 stalks)
1 Tbsp butter
½ Can water chestnuts

Sauce
1 (10.5 oz) Can cream of mushroom soup
⅓ Cup chicken broth
1 Tbsp soy sauce
⅛ tsp (ish) hot pepper paste
⅛ tsp black pepper
⅛ tsp garlic salt

1 Cup chow mein noodles
½ (ish) Cup cashews

Directions:

1. Cook chicken breasts, topped with fresh pressed garlic in lidded pan, over medium heat until cooked through. Cut into cubes.
2. Preheat oven to 350º & search cabinets for a 9x9 inch casserole dish.
3. Mix sauce ingredients together, then pour over cubed chicken in the pan & lower heat. Bring saucer to bubbly goodness, simmer for 5mins.
4. Saute onion & celery in butter over medium heat for ~5mins, until veggies turn clear.
5. Mix saucy chicken, cooked veggies, & water chestnuts into casserole dish.
6. Bake at 350 for 20 minutes.
7. Top with cashews & crunchy chow mein noodles & return to oven for ~5mins or until cashews & noodles start to turn golden brown.

Goes well served atop rice. If having with rice, start cooking rice a tad before chicken is done cooking.

This is a great recipie to make together and many of the steps can be done simultaneously (cooking raw chicken while chopping veggies & mixing sauce, simmering chicken in sauce while celery and onions cook in butter)

I just made this last night and it was SO TASTY. I also made a double batch in a 9x13 in casserole dish, which it might be best to omit the crunchy noodles from the leftover half to prevent sogginess & add em after reheating.
