1/3c flour
2tsp melted butter
dash of salt
1Tbsp and 2tsp oil
1/3c milk
1 egg

Directions:
Sift flour into large bowl. Make a well in the center of the flour and add salt and half of the milk. Gradually whisk to make a smoother batter. Whisk in eggs and 1Tbsp oil; do not over beat as batter will become elastic and crepes will be tough. Stir in melted butter and half of remaining milk. Cover and let batter stand 1 hour. (I've never done this). before cooking, stir in enough milk to make a batter the consistency of cream. Brush pan with oil and heat until a drop of batter in pan sizzles. Pour 2-3Tbsp of batter into pan, turning pan quickly to coat bottom of pan evenly. Cook over medium-high heat until batter is dry. Do not turn. Slide out of pan onto plate and fill with your favorite fruit and whipping cream.
