2 Cups Old-Fashioned Oats
1/2 Cup Unsweetened Shredded Coconut
1/2 Cup Unsweetened Flaked Coconut
1/2 Cup Slivered Almonds
1/3 Cup Raw Shelled Pumpkin Seeds or Raw Shelled Sunflower Seeds
1 Tablespoon Golden Flax Seed
1 Teaspoon Cinnamon
Pinch of Salt
4 Tablespoons Melted Coconut Oil
1/2 Cup Real Maple Syrup
1 Teaspoon Vanilla Extract
1/4 Teaspoon Coconut Extract

Preheat oven to 300F. Line a large baking sheet with parchment paper. Set aside.
In a large bowl, combine oats, coconuts, almonds, pumpkin seeds or sunflower seeds, cinnamon, and salt. Set aside. In a small saucepan whisk together coconut oil, maple syrup, vanilla, and coconut extract over low heat. Once melted, pour liquid mixture over dry ingredients. Stir until dry ingredients are well-coated. Pour the granola mixture onto the prepared baking sheet. Spread granola into an even layer. Bake for about 30 minutes or until granola is golden brown, stirring every 10 minutes. (It is very important to not burn the granola. Sometimes I use a lower heat and cook for a longer duration to make this process easier.) Let granola cool completely. Store in an air-tight container for up to 1 month.
