2 pkgs yeast
1 cup water
2 teaspoons sugar

6 whole eggs
1 cup sugar
1 cup oil

juice and rind of 1 lemon
2 cups water

1 teaspoon salt
1 cup raisins
9 cups of flour - approximately - Enough to make a soft dough

Directions:
Directions:
Mix water, sugar and yeast. Let stand 10 minutes.

Beat eggs, sugar and oil together well.
Add water and lemon.

Combine with yeast mixture. Mix gently

Mix flour, raisins and salt together.

Gradually add most of dry mixture to liquid, mixing well.
Knead in remaining dry mix well to form a soft dough.

Let rise 1 hour or until double in size. Punch down and let rise again.

Put into well greased cans - no more than 1/3 full. Let rise.

Brush lightly with diluted egg mixture (1 egg and 2tbsp of water or milk)
Bake at 325 degrees for 30 to 45 minutes.

OR some recipes state to bake at 325 degrees for 10 minutes and then lower heat to 250 degrees and bake for 25 to 30 minutes more.

Nancy’s notes: I did not fill past 1/3 and they rose to perfect height of canister. I also weighed the dough for each put 5oz and 12oz in each 5/12 oz canister directly.
