1 small spaghetti squash (about 3-4lbs)

2T Butter

2cloves garlic finely minced

1/4C Finley minced parsley or basil

1/2t salt (to taste)

1/4 C Parmesan cheese

Preheat oven 375

Pierce squash with paring knife and bake for 60 mins

Cut in half remove and discard the seeds. Then use a fork to scrape the squash to get long strands. If the squash is difficult to scrape return to the oven for 10 minutes.

Aim a large sauté pan add butter and garlic over medium heat. When garlic becomes fragrant, add parsley, salt and spaghetti squas. Toss well then add Parmesan cheese and extra salt to taste.

This dish is so good with a traditional spaghetti sauce. It’s a great trade for spaghetti noodles when following a gluten free diet.
