1 c. peanut butter
2⅔ c. all-purpose flour
1 tsp baking soda
1 c. light brown sugar, packed
1 tsp. cornstarch
1 c. sugar
1 tsp. salt
2 tsp. vanilla extract
1 c. butter

Directions:
Directions:
Preheat oven to 350º.

Whisk together flour, baking powder, baking soda, cornstarch and salt in a large bowl and set aside.

Beat together the softened butter, sugars until light and fluffy. Mix in peanut butter until smooth. Add vanilla and eggs, one at a time, scraping the bowl down after each addition. Reduce mixer speed to low, add dry ingredients until they are just incorporated and the batter is smooth, being careful not to over-mix.

Form the dough into 1.5 tablespoon round balls and place on parchment paper on cookie sheet. Press with fork to flatten, place 2" apart. Bake for 10-12 minutes until the edges are golden brown and the centers are slightly puffy. Remove from oven, and then transfer cookies to cooling rack.
